Long ago, there was a merchant chef who traveled the world. His name was Koki, and he was an absentminded fool who never shied away from trying something new, especially when it came to food. Ember squash, plagueberries, shallow crabs, growling caterpillars — no ingredient was too troublesome for him to find or too strange to eat if it meant discovering a new, delicious flavor. He was more than just a glutton, though. He was a man with a dream, a dream of making the perfect dish. To this day, no one knows if he ever fulfilled such a bold ambition, but his knowledge still remains.
Though far from complete, much of Grand Master Koki’s messy notes have been gathered and transcribed into this body of work so that young chefs can glean inspiration from his wealth of wisdom.
